Located in the St. Regis hotel where I was staying in Cairo, one of the restaurants called, Sirocco, had a highlighting meal.
I don't recall the names but I started with a fresh made salad of vegetables and herbs along with some fresh bread that were both the perfect start to the meal. For the main entree, it was a chicken that was cooked on coals with charred peppers and red onions and then fresh herbs on top. On the side was an Egyptian style rice that was topped with crispy onions I think and some other ingredients. The server topped it with a spicy red sauce that complimented it perfectly—This paired with the charred chicken and fresh vegetable salad was an incredible meal and one I would have again.
